Our miso is based on the traditional Japanese method and thus goes through natural fermentation process. This miso has been fermented for 10 months now as of November! The longer you wait, the more mature, deeper and earthy flavour it gets.
The butternut squash is roasted whole including the seeds and skin to give more nutrients and flavour to the miso. You can use this miso in the same way as regular miso, and it's great addition to stew, curry, and gravy sauce.
