We are hosting our first workshops in 2022 at the centre of downtown Victoria and a vibrant local food hubVictoria Public Market, which gives easy access to everyone who is eager to dive in this beautiful art of fermentation!

Miso Workshop

Come join us for this 2 hour hands-on miso workshop, where you will not only learn how to make a Japanese essential umami condiment, the traditional soybean miso, but also meet the core ingredient called koji, used in most Japanese (and some Asian) ferments including soy sauce, sake and rice vinegar. 

Making miso is very simple, but it can be laborious work. This is why the more, the merrier! You will take home the knowledge needed to make more miso at home and a special gift you can look forward to in several months.

Ticket:

$65 for 1 or $120 for 2 (workshop or person) *If you attended our workshop in 2021, it will be $55.

Included in the cost:

  • All required ingredients 
  • A fermentation vessel
  • Samples of miso and light snack
  • Recipes
  • 750 g of miso to ferment at home

Kimchi Workshop

Kimchi

Come join us for a fun vegan and gluten-free kimchi making workshop. Kimchi is a traditional and iconic Korean fermented vegetable dish that is included in every Korean meal. It is refreshing, tangy, somewhat sour if fermented long enough and savoury and goes well with numerous dishes. 

Traditionally, kimchi making is a village task, often involving the entire family and neighbours. We want you to experience the warmth and satisfaction of the hands-on learning experience. We will walk you through step by step how to make delicious kimchi.

Included in the cost:

  • All required ingredients
  • Samples of miso or kimchi and light snack
  • A recipe to make miso or kimchi
  • 250 g of miso or 500 ml of kimchi to ferment at home

Note:

What to bring:

  • Apron

For Miso

  • A container that can hold 500 ml (you need some space to put a weight, so a wide-mouth container is necessary) 
    • Examples: glass jars, clay pots, yogurt containers, candy jars, Tupperware
  • A medium to large mixing bowl 

For Kimchi

  • A 500 ml wide mouth glass jar or a glass-lock type container 
  • A knife and a small cutting board
