Miso Workshop

Come join us for this 2.5 hour hands-on miso workshop, where you will not only learn how to make a Japanese essential umami condiment, the traditional soybean miso, but also meet the core ingredient called koji, used in most Japanese (and some Asian) ferments including soy sauce, sake and rice vinegar.
This year, we are collaborating with a local Japanese restaurant, Uchida Eatery. The chef Yasu will make a delicious lunch using his 2-year aged homemade Miso to nourish and get you ready for the following work.

Kimchi Workshop

Come join us for a fun vegan and gluten-free kimchi making workshop. Kimchi is a traditional and iconic Korean fermented vegetable dish that is included in every Korean meal. It is refreshing, tangy, somewhat sour if fermented long enough and savoury and goes well with numerous dishes.
Traditionally, kimchi making is a village task, often involving the entire family and neighbours. We want you to experience the warmth and satisfaction of the hands-on learning experience. We will walk you through step by step how to make delicious kimchi.

Amazake Workshop
Come join us for a fun and delicious Amazake workshop. Amazake is fermented rice beverage. It's very nutritious and jam-packed with lots of vitamins, enzymes, and fibre. This is why it earned its nickname "drinkable IV drip"! What's even better is it's naturally sweet, so you can use it in place of sugar for cooking and baking.
Traditionally, Amazake is made only with rice, but for this workshop, we will explore different medium as well and compare the tastes! We will make one Amazake dessert and Amazake dressing together.

- A container that can hold 500 ml (you need some space to put a weight, so a wide-mouth container is necessary)
- Examples: glass jars, clay pots, yogurt containers, candy jars, Tupperware
- A medium to large mixing bowl
For Kimchi
- A 500 ml wide mouth glass jar or a glass-lock type container
- A knife and a small cutting board
