Zero Waste Energy Balls

If you are a type of person who makes everything from scratch including almond milk, you are left with a byproduct - pulp!

We made energy balls with those pulp but with a little twist to the flavor. Can you guess what? Shiro Miso! (Did we tell you we like adding a secret ingredient to our dessert?)

To make it look pretty, we also prepared 4 toppings. Yum! You can freeze them too, so double or triple the recipe and save them for later. Future you will appreciate now you!

Ingredients

1/2 cup       Almond pulp

1/2 cup       Pecans (or other nuts)

10-12          Medjool dates, pitted 

1/4 cup       Cacao powder

1 Tbsp        Cacao nibs

1 tsp           Vanilla extract 

1/2 tsp        White Miso

Toppings    Cacao powder, matcha, sesame seeds, kinako, etc. (optional)       

Instructions: 

  1. In a food processor, add almond pulp (from making almond milk), pecans or other nuts, and dates. Process until combined (chunky).
  2. Then, add cacao powder, cacao nibs, white miso, and vanilla extract. Process until combined.
  3. If dry, add a bit of water to adjust the texture. It should be moist enough to form a shape with fingers.
  4. Make the dough into bite-size balls. One recipe makes about 12 balls.
  5. Prepare toppings you want to coat your balls with (optional).

* You can freeze them too, so double or triple the recipe and enjoy them for later!
