Tofu Shiraae (dressed in sesame & white miso)
As the weather is finally treating us better in the West Coast (it was such a cold rainy spring, wasn't it?), there is transition to what we eat. In a hot day when you crave for easy salad, this is for you. It only takes 10 minutes to prepare and yet is very delicious and nutritious. Let's start!

Ingredients
250 g Tofu (silky or soft)*
1 - 1 1/2 Tbsp Ginger Miso or white miso**
1 Tbsp Sesame seeds
Spinach, blanched (or other greens such as chards, Shungiku)
(optional) carrots, walnuts, pumpkin seeds or sunflower seeds, strawberries
Instructions:
- Drain water from tofu by casually wrapping it with kitchen towels. Replace them a few times until it’s completely drained.
- Mash it in a bowl with a whisk until it becomes smooth texture.
- Blanch spinach or your choice of greens and squeeze extra water. If you are adding carrots, blanch in salt water or steam for a few minutes.
- Add miso and sesame seeds to tofu and mix together. Add spinach or other greens and incorporate.
- You can top with walnuts, seeds, or fruits to serve.
* You can substitute with medium firm tofu as well, but we like silky or soft tofu for its smooth and creamy texture.
** If you are using regular white miso, add a little bit of sweetener such as maple syrup, honey, or amazake. Our Ginger Miso has honey so you don't need to add any sweetener.
